What is Chardonnay?
Chardonnay is the world's most popular white wine grape, and it can taste either crisp and lemony when made in steel tanks or rich, buttery and vanilla-like when aged in oak barrels.
Chardonnay is a shape-shifter. The grape itself is pretty neutral, so what you taste mostly depends on where it grew and what the winemaker did with it. That's why one person 'hates Chardonnay' and another orders it every time.

What Chardonnay tastes like
Unoaked Chardonnay is crisp and clean: green apple, lemon, pear, maybe a little wet-stone, chalky edge. Oaked Chardonnay is the famous California style, with ripe yellow apple and pineapple wrapped in vanilla, toast and butter.
That buttery thing has a name: malolactic fermentation, a natural step that softens the tart acid into something creamy. If you love it, look for it. If it tastes like movie-theater popcorn to you, avoid it.
Where it comes from
Chardonnay started in Burgundy, France, where white Burgundy and Chablis are both 100% Chardonnay, even though the labels don't say so. California made the rich, oaky style famous, and great bottles also come from Oregon, Washington, Australia and Chile.
Buttery or crisp: how to tell from the label
Words like 'unoaked', 'steel' or 'Chablis' mean crisp and lean. Names that lean into richness, such as 'Butter', 'Reserve' or 'barrel fermented', usually mean the full oaky experience. Cooler places like Sonoma Coast land in the middle.
Not sure? A $15 Kendall-Jackson is a good center point. If that feels too rich, go leaner. If it feels too thin, try Rombauer or Bread & Butter.
What to eat with it
Oaked Chardonnay loves rich, creamy food: roast chicken, lobster with butter, crab cakes, fettuccine Alfredo, corn chowder. Crisp unoaked Chardonnay is better with salads, shellfish and anything with lemon.
