Moxie Vino

What wine goes with prime rib?

Cabernet Sauvignon is the classic prime rib pairing — the fat in the beef softens the wine’s grip, and each makes the other taste better.

This is the one meal where the big expensive red actually earns it. Prime rib is fatty and rich, and fat is exactly what tannin needs. That drying, grippy feeling a young Cabernet leaves in your mouth disappears the moment it hits a bite of ribeye. Go bigger than you would any other night.

4 bottles that actually work with prime rib

Depends how you are cooking it

With horseradish cream
Horseradish burns, and alcohol amplifies burn. Pick something under 14.5% and serve it slightly cool.
Rare in the middle
Rarer beef takes a softer wine. Lean Malbec or Merlot rather than a young, tight Cabernet.
Heavy pepper crust
Syrah. Its natural black-pepper note doubles down on the crust rather than fighting it.

What to skip

Light reds like Pinot Noir or Beaujolais
Not wrong exactly, just outgunned. The beef flattens them and you taste almost nothing.
Crisp white wine
There is nothing here for it to cut through in a useful way. Save the Sauvignon Blanc for the fish course.
