How do you chill wine fast?

Submerge the bottle in a bucket of ice, cold water and a big handful of salt, and it will be cold in about 10 to 15 minutes, much faster than the freezer.

Ice alone doesn't touch enough of the bottle. Ice plus water surrounds it completely, and salt drops the temperature even further. It's the fastest method you have at home.

Ice, water and salt
About 10–15 minutes
Ice and water only
About 20–30 minutes
Freezer
About 30–45 minutes, set a timer
Fridge
About 2–3 hours

The ice bath, step by step

Fill a bucket, big pot or clean sink with ice and cold water, enough to reach the bottle’s neck. Stir in a generous handful of salt, push the bottle in, and give it a spin every few minutes to move the cold around.

Wipe the bottle dry before pouring. The salt water is cold enough that it can be chilly to hold.

Other quick tricks

The freezer works if you set a timer. A forgotten bottle can freeze and push out the cork or crack, and sparkling wine is especially risky. Wrapping the bottle in a wet paper towel first helps it chill a bit faster.

Already poured? Drop a few frozen grapes into the glass. They chill the wine without watering it down, unlike ice cubes.

How cold is cold enough

Whites, rosé and sparkling taste best around 45 to 50°F, which is fridge cold. Light reds like a slight chill too, so 10 minutes in the ice bath is plenty for those.
